Barefoot Bloggers - Pasta with Sun-Dried Tomatos- JULY I

I have joined a great new blogosphere! Not that food blogs are new to me, but I stumbled yesterday upon the Holy Mecca- all things Ina-- a tribute to Herself-- a blogging group that makes and reviews Barefoot Contessa recipes twice a month. I have never been disappointed by anything Ina makes, so it seemed a perfect way to try to make more of the things I have been wanting to try and to lift myself out of the mid-summer cooking slump.

Made the salad last night, for lunch at the office today. The recipe said that it "sits well" but that the basil and the parm should be a last minute addition, so that's how I proceeded. I had only 8 oz of fresh mozz, and only canned black olives (pathetic) but went ahead with what I had.

Overall, I thought it was quite tasty. I did think that it would have been tastier made closer to meal time-- a bit dry when it sat overnight. Still, good. I liked the dressing. I was originally worried that it was lacking in ingredients (though Ina always nails it and Must Be Trusted). My friends liked it, too- one suggested that spinach or pepperoni might be good additions....hmmmmm, not sure about that one. Not my favorite Ina recipe, but I will for sure make this one again.

Very excited to be stretching myself into making more recipes that I have always wanted to make, but didn't have an excuse for.
